Potato casserole with herbs
4 servings 1 serving
600 g potatoes
2 crushed garlic cloves
2 medium onions, sliced
2 tbsp chopped fresh herbs (parsley, chives, rosemary, thyme or any of your favourite)
125 g cheddar cheese, grated
50 g parmesan cheese, grated
1 tsp oil
400 ml vegetable stock
Preparation:
- Boil potatoes for about 10 minutes, drain and allow to cool a little.
- Preheat oven to 180C degrees. Cover oven dish with 1 tsp of oil.
- Slice potatoes finely and put 1/3 to the bottom of the dish. Cover with one third of garlic, onion slices, herbs and cheddar cheese.
- Place other layers the same way, pour over with hot vegetable stock and bake in oven for about 15 minutes. Sprinkle with parmesan cheese and bake another 5 minutes until cheese has melted and golden.
- Serve and enjoy!
